Kapurung, Original Fresh Culinary of South Sulawesi

Holiday Ayo - When imagining the culinary specialties of South Sulawesi, maybe Coto Makassar is the first food that comes to mind. But actually there is one typical South Sulawesi food that is no less delicious. Its name is Kapurung, a soupy food with a slightly sour taste but very refreshing. This culinary is a traditional food from Palopo, especially the people of Luwu Village.

The way to make it is quite easy, what needs to be prepared is real sago or sago flour which will later be dissolved using hot water. After the sago thickens, the dough is formed into small balls the size of meatballs. This sago-based food is served with a peanut-spiced sauce mixed with various kinds of vegetables and fish meat which is full of nutrition.

Vegetables that are usually used to accompany Kapurung are long beans, sweet corn, eggplant, spinach and banana blossoms. Meanwhile, the ingredients are chili, candlenut, pepper and garlic. The sour sensation of the Kapurung sauce comes from the patikala fruit. This food will be more delicious if served with lemon or lime juice.

For culinary connoisseurs who don't really like fish, chicken and shrimp can be an alternative. Kapurung is very delicious when served hot. Peanut sauce and rich spicy spices will give warmth to the throat of the audience. Kapurung made from sago is very easy to digest, chewy and filling. Culinary that has existed since ancient times is usually eaten like a staple food, but over time, this food has been displaced by rice which is the staple food of Indonesian citizens. Even so, Kapurung is still maintained as a staple food in several other areas, especially Papua and Maluku with different names.

The price of Kapurung is relatively cheap, usually these restaurants sell Kapurung with prices starting from 15,000 rupiah. In the Luwu area itself, Kapurung is better known as Pugalu. Meanwhile in the Maluku region it is known as Papeda. Even though it is not as well known as Coto Makassar, many people deliberately visit typical Makassar restaurants to look for a variety of Kapurung menus.

It would be wrong to assume that Kapurung has no nutritional value. Various kinds of vegetables served with lime can meet the nutritional needs of the body, plus pieces of fish, chicken or shrimp will certainly be a good source of protein. 

While the value of carbohydrates contained in lime is lower than rice. So this food is also suitable for culinary connoisseurs who are watching their weight, as long as the broth is not excessive. Especially when the rainy season arrives, Kapurung and its broth will surely lull the tongues and stomachs of the connoisseurs.
