Gudeg Manggar, the Indonesian Cultural Heritage made from Coconut Flower

In 2021, Gudeg Manggar itself is designated as an Intangible Cultural Heritage of Indonesia 2021, by the Ministry of Education, Culture, Research and Technology.

The name of gudeg manggar is taken from the material used, namely coconut flowers or commonly called manggar. Manggar is used as an alternative to young jackfruit which is expensive. However, this condition did not last long after jackfruit became a relatively cheap and easy to find ingredient.

Because gudeg jackfruit is increasingly being traded, gudeg manggar is now a rare dish and is sought after by buyers because it offers different flavors and its own uniqueness.

How to cook gudeg manggar is similar to gudeg jackfruit. However, gudeg manggar takes longer than gudeg gori. It takes about 3 days to remove the astringent taste and make the coconut flower texture softer to eat. The difference is, the texture of the young jackfruit is more tender, while the mangor is more crunchy.

Gudeg manggar is usually served with various other preparations such as tempe semangit as additional seasoning, resulting in a very distinctive taste. There is also gudeg manggar served with bones and chicken skin to make it more savory.

Don't forget the skin crackers, or other crackers as a companion that enriches the texture of the completeness of this dish. Gudeg manggar had become rare because of the loss of fans.

However, since the last few years, gudeg manggar has returned to popularity after being shown as a rare culinary that must be preserved. Apart from Yogyakarta, you can now find gudeg manggar traders who specialize in selling gudeg manggar.
